F.A.O Justin re Turkey

Ordered a Free range Turkey @8lbs any "trade" cooking hints?[:)]

what are you doing with it? the legs take longer to cook than breasts, so, if i was going to cook turkey for xmas what i would do is... take the legs off, bone the legs out, stuff them with minced turkey , chestnuts ,sage, blah blah blah,. so you are left with whats called the crown! personally i would take them off the bone to so you are left with a carcass, which i would roast off and use for my gravy. with the breast i would sear them in a hot pan to keep the juices in, and whack them in a hot oven til cooked , about 45 mins. with the legs roll them in tin foil and roast them as well..... i think i will stop there cos lets face it , its too much work isnt it????lol. "they" say for an 8lb turkey 3 hours, although i would check it after 2 , thats if you are cookin a whole bird...

That turkey recipie Justin sounds absolutely delicious. My next door neighbour bones her turkeys. I must say boning the turkey sounds very difficult. I cooked the turkey Nigella's way, with the breast side down. It only needed basting once, and it came out beautifully moist. I would certainly recommend this. I am now making a stock with the bones, ginger, garlic, cloves in onion, streaky bacon, bayleaves and bouquet garni. I have never made a stock before, but is certainly smells very good. [:)]

Turkey was very good..it actually tasted better on Boxing Day , cold with pickles(mums homemade) however the 'more 'expensive waitrose red was corkled!! do you reckon they'll refund/exchange it? Hope the rest of you had a good Christmas ![8D]

Yes. Waitrose should provide a refund. You need only take the empty bottle back along with the receipt.

No shop will expect a customer to return food if it is inedible. Unless it is a screwcap bottle the top cannot be properly sealed. With food you do not have to retain the complete article.

with a screwcap wine you wouldn't need to return it !! I'll be glad when all wine is screwcapped! I've heard 1in 10 wines are 'corked' so I've been lucky really! Talk of which when will glass to be recycled be collected by the council?

I heard that the UK already collects so much glass for recycling that it has to send it abroad for processing. Having said that I like the Swedish approach to recycling. The apartment we stayed in this year had separate containers for cardboard, newspapers, plastics, cans and bottles. The family from Gothenberg that we did a home swap with saved almost everything they used for our return to Hertford.............which we almost entirely hoofed into the bin.

Stevenage already has a pretty good recycling policy - they provide 2 bins per household - a red one for glass, and a blue one that is divided into 2 for paper & cans, & they collect every week. I'm sure Hertford used to have a recycling bin for each house but think it fell by the wayside

In North Carolina (down south, USA) where I'm from, we deep fry our turkeys in a big vat of peanut oil in the back yard. Yes it's very redneck, but it's the best turkey you'll ever have! If we're around next year, maybe we'll invite those interested, as well as the local fire dept., in viewing the spectacle...

Sprouts are probally my most favorite veg, but because of their un-social side effects i only eat them at christmas

Just thought i'd add that WGC has the 2 recycling bins also, is there anyone on hear that has better means than I to look into this and find reasons why Hertford seems to have missed the beat on this one?

It isn't compulsory, but if you don't eat them, it could mean tremendous bad luck for the year that follows!!!!![:0] Sometimes you just have to grit your teeth and eat what you must eat.

My brother in laws mother always made him eat 1 sprout at Christmas. He feels that he still has to even though he doesnt have christmas with his mum!

I believe Waitrose are now the only chain to offer this recompense. Tesco used to but now you just get one lot of money back, or a replacement.

It was a �6.99 Merlot 2000 from S.Africa Stellenbosch(?) , the name escapes me!
