I was disgusted to find out recently that any credit card tips left to the waiters at ASK infact go to the company. This includes service charges on large tables who pay by card. The company get away with it by paying the staff around £1.50 less an hour than minimum wage, and then use the credit card tips to bump everyone up to minimum wage. The waiters never get any extra on top of their pay. Cash tips they keep, card tips they lose to the company. Pizza Express have a similar story but not quite as bad. The credit card tips go into their wages and the company take around 10% admin fee and they then get taxed on it. I think if restaurants are going to operate in this way then they need to inform the customer exactly where this gratuity is going (the staff are warned that if they inform the customer of the credit card situation then it is gross misconduct) If I have received good service at a restaurant then I want to reward the waiter not the company director.
