I know there are differing opinions on the merits of Sele Farm but the (excellent) butcher in Sele is taking a risk displaying a sign that says "Local Peasants"

I don't think he's expressing any opinion. It's just a pun and if anything more is read into it then I think you're missing the point. Besides, the world's full of people expressing opinions.
